Recipe - Sugar Free Raspberry Muffins



I've been craving muffins for a while, but wanted to make something that Enid could also attempt to eat too (she loves her smushy finger foods). I'm not against giving her any sugar, but obviously keeping it to a minimum and using natural sugars is better for her and also for us and since she only really eats vegetables I don't want to overwhelm her!

I searched for a simple recipe that didn't require the use of artificial sweeteners and eventually found one which uses apple juice. I've changed it to suit my tastes and am happy with the outcome as I was a little worried they would be bland without the sugar.


Ingrediants (Approx 12 muffins)

2 ripe bananas
1 grated apple
2 fl oz apple juice
6 oz raspberrys (I froze mine first so they wouldn't squish as much when mixing!)
16 oz self raising flour
1 egg
2 oz melted butter
1 tbsp cinnamon
1 tbsp vegetable oil
1 tsp baking powder


1. Heat the oven to 190 degrees (celcius)
2. Mix the wet and dry ingredients separately (excluding the raspberry's) and then carefully combine in a large bowl.
3. Add the raspberry's slowly (being careful not to squidge them too much)
4. Spoon the mixture into cases, making sure the mixture is filling each case.
5. Cook for 25 mins or until brown on top
6. Leave to cool and then sprinkle a little cinnamon over each muffin.
7. Enjoy!


These tasty but healthy muffins can be made with any fruit you like and you could even try substituting the apple juice for pineapple or orange juice. I'll definitely be making more of these with blueberry's!
